Ingredients:

– 3 pound salmon fillet, skinless
– ¾ teaspoon salt
– ½ teaspoon black pepper
– 1 tablespoon olive oil
– 1 orange, thinly sliced
– 1 lemon, thinly sliced
– 12 sprigs fresh thyme

Instructions:

Line a baking sheet with parchment paper, and place the salmon on it. Drizzle the salmon with the olive oil, and sprinkle the salt and pepper over it. Place the orange and lemon slices and the thyme on the salmon.

Roast for 20-25 minutes, or until the salmon is opaque throughout. Serve with a side of steamed vegetables.


Grilled Chicken with Arugula Salad

Ingredients:

– 4 six-ounce boneless, skinless chicken breasts
– ½ teaspoon ground coriander
– 1 teaspoon salt
– ½ teaspoon black pepper
– 3 tablespoons olive oil
– 3 tablespoons lemon juice
– 5 ounces baby arugula
– 4 radishes, sliced
– ½ red onion, sliced

Instructions:

Heat grill to high.

Optionally, pound each chicken breast to a ½ inch thickness. Mix ½ teaspoon of the salt with ¼ teaspoon of the pepper and all of the coriander. Season each chicken breast with this mixture. Oil the grill grate. Grill chicken breasts until thoroughly cooked, about 2-3 minutes each.

Mix olive oil, lemon juice, and remaining salt and pepper. Add arugula, radishes, and onion, and toss to combine. Serve salad along with chicken breasts.


Tomato and Mozzarella “Burger”

Ingredients:

– 6 large ripe tomatoes
– 2 tablespoons olive oil
– 1 teaspoon salt
– ¼ teaspoon black pepper
– 1 large clove garlic, thinly sliced
– 8 ounces fresh mozzarella cheese
– 2 sprigs fresh basil leaves

Instructions:

Preheat oven to 450˚.

Slice each tomato in half horizontally. Arrange on a baking pan or baking sheet, with cut sides up. Drizzle with oil, and add salt, pepper, and garlic slices on the tomatoes. Roast until softened, about 15-30 minutes.

While roasting, cut the mozzarella into six thick slices. When tomatoes are done, use a spatula to place a slice of mozzarella on each bottom half, and then place top half of tomato on top to create a “sandwich.” Serve with basil.

Ingredients:

– ½ cup mayonnaise
– ½ cup pesto (store-bought)
– 2 pounds pre-cooked rotisserie chicken, chopped
– ½ teaspoon salt
– ¼ teaspoon pepper
– 6 cups leafy greens (romaine lettuce, baby spinach, or baby arugula)

Instructions:

Combine mayonnaise, pesto, salt, and pepper. Toss with chicken. Serve over leafy greens.


Shrimp with Tomato Salsa

Ingredients:

– 6 tablespoons lemon juice (or juice of two lemons)
– 1 bay leaf
– 2 ¼ teaspoon salt
– ¼ teaspoon black pepper
– 1 pound large shrimp, peeled and deveined
– 1 tablespoon prepared horseradish
– 3 tablespoons olive oil
– 1 pint cherry tomatoes, halved
– 2 small heads Bibb or romaine lettuce

Instructions:

Fill a large pot with about 8 cups of cold water. Add half the lemon juice, bay leaf, and 2 teaspoons salt. Bring to a boil.

Add shrimp and cook until pink and opaque throughout, about 1 to 3 minutes. Transfer to a bowl of ice water to cool.

Whisk together horseradish, olive oil, remaining lemon juice, pepper, and ¼ teaspoon salt. Add tomatoes and toss to coat.

Place several leaves of lettuce on each plate. Pat shrimp dry and divide among the plates. Top with tomato salsa mixture and serve.


Steak with Fresh Herbs

Ingredients:

– 1 ½ pounds skirt steak, cut into four portions
– ¾ cup fresh parsley leaves
– 2 cloves garlic, peeled
– 1 ½ teaspoons fresh oregano leaves
– 1 tablespoon red wine vinegar
– ¼ teaspoon salt
– 1/8 teaspoon black pepper
– 1 Vidalia onion, peeled and sliced into rings

Instructions:

Heat broiler.

Finely chop parsley, oregano, and garlic. Add oil, vinegar, salt, and pepper. Mix well.

Rub mixture into both sides of steak portions. Place in roasting pan. Broil for 4-5 minutes. Remove and let rest for five minutes. Serve with raw onion rings.


Lamb Chops with Tomatoes and Olives

Ingredients:

– 4 lamb chops, about 1 ½ inches thick
– 1 tablespoons olive oil
– 1 teaspoon paprika
– ¼ teaspoon salt
– ½ teaspoon black pepper
– 4 shallots, halved
– 4 plum tomatoes, quartered
– ¼ cup pitted kalamata olives
– ¼ cup fresh parsley

Instructions:

Preheat oven to 400˚. Heat oil in a large oven-proof skillet over medium-high heat.

Season lamb chops with paprika, salt, and pepper, and cook in skillet until browned, 2-3 minutes per side. Add shallots to skillet, and place skillet in oven until lamb is cooked to desired doneness, about 8-10 minutes for medium. Transfer lamb to plates.

Add tomatoes, olives, and parsley to skillet. Toss with shallots to combine. Serve the mixture over the lamb portions.

– 1 ½ pounds ground beef
– 1 onion, chopped
– 1 green bell pepper, chopped
– 2 garlic cloves, minced
– 2 cans red kidney beans, rinsed and drained
– 2 cans diced tomatoes, drained
– 2 tablespoons chili powder
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon cumin

Instructions:

Cook beef, onion, bell pepper, and garlic in a skillet over medium-high heat until beef is no longer pink. Place in slow cooker with remaining ingredients. Cook on high for 3-4 hours, or low for 5-6 hours.

Ingredients:

– 1 ½ pounds ground beef
– 5 baby carrots, diced
– 1 cup baby spinach, chopped
– 3 cloves garlic, chopped
– ½ large onion, diced
– 1 can (14.5 ounces) tomatoes
– 1 teaspoon parsley
– 1 teaspoon savory
– 1 teaspoon thyme
– 1 tablespoon cooking oil
– ½ teaspoon salt
– ½ teaspoon pepper

Instructions:
Preheat oven to 400˚.

In a small pot, heat cooking oil over medium heat. Add garlic and cook for two minutes. Add carrots, spinach, onion, tomatoes, parsley, savory, thyme, salt, and pepper. Cover and simmer for 20 minutes.

Use a blender to blend the mixture into a thick sauce. Mix the meat into the sauce very thoroughly. Separate into nine equal parts. In a large baking dish, shape the meat mixture into mini-loaves. Bake until cooked through – about 45 minutes.


Spicy Drumsticks

Ingredients:
– 4 chicken drumsticks (about one pound total)
– ½ cup bottled picante sauce
– 1/8 teaspoon cayenne pepper
– ½ teaspoon smoked paprika
– ¼ teaspoon dried thyme
– 1 bay leaf
– 2 teaspoons olive oil

Instructions:
Coat a slow cooker with nonstick spray. Place chicken in cooker. Combine picante sauce, cayenne pepper, paprika, thyme, and bay leaf. Spoon over chicken. Cook on high for 3 hours, or on low for 6 hours.
Transfer chicken into a serving bowl. Stir olive oil into remaining sauce, and remove the bay leaf. Spoon sauce evenly over chicken, and let stand for ten minutes before serving.
